I'm contemplating whether or not to do the bulb switch now, or after they replace the tail light... I'm worried they're going to throw out the LEDs when they replace it...

If you want bright red lights for tail and brake lights, you should replace with red LEDs; If you use white LEDs for the tail and brake lamps, you lose significant brightness because the lens filters out everything but the red wavelength, which with a white LED, isn't much. Same for amber turn signals, and side markers up front, use amber LEDs. The only place you should use a white LED is the reverse lights.
